Ingredients

  • ½ Onion (sliced thin)
  • 3 Garlic (sliced thin)
  • 1 tbsp. Ginger
  • ½ cup Carrots (sliced)
  • 4 cups Chicken Stock
  • 1 cup Chicken
  • ¼ cup Shiitake Mushrooms (optional)
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 tbsp. Italian Seasonings
  • Garnish:
    • Lemon
    • Parsley

Directions

  1. Sautee the onions, garlic, ginger, seasonings in 1 tbsp. olive oil (3-4 mins)
  2. Add Carrots, cook about 2 more mins
  3. Add Chicken stock bring to a simmer
  4. Add Chicken, cook about 6 mins
  5. Add Mushrooms, cook about 1 min
  6. Taste and add more seasonings if you desire. The key to food that is extremely simple but you must taste your food before you serve it! Seasoning is something easy that you can correct.
  7. Garnish, Serve and Enjoy!
